Bergamot Orange & Meyer Lemon

Ingredients:

Bergamot orange
Meyer lemon*
pure cane sugar
Bitterness level: Assertive

Bergamot oranges look like giant ridged lemons, with pale yellow (and quite tough) skin, and yellow fruit that doesn't have much juice. The peel of the bergamot gives Earl Grey tea its distinctive taste, and would be almost too astringent by itself in marmalade. The Meyer lemon adds a bit of sweet-tartness which compliments, not overpowers, the bergamot.
