Most often, we use the Marsh variety for our Grapefruit Marmalade with outstanding results. The Marsh has pale yellow skin and fruit, transforming into a beautiful orange as it cooks. The first few batches we made utilized the Ruby Red variety, but the Marsh variety thrives in the Bay Area, and we’ve got a neighbor with a prolific tree!
