Lemon Lime

Ingredients:

Bearss lime*
Eureka lemon*
Meyer lemon*
pure cane sugar
Bitterness level: somewhat assertive

A Bearss lime grown in warm climates will stay green, but the local fruit we use turns yellow after a cold snap. Suggested by our friend John, editor of the Kensington Outlook, Lemon Lime Marmalade has become one of our best-sellers among children, and who can blame them? Sweet and tart and very delicious.
