
What exactly is marmalade?
The 1993 edition of the New Shorter Oxford English Dictionary says “A preserve made by boiling fruits (originally quinces, now citrus fruit, specifically oranges) with sugar to form a consistent mass.” We exaggerate this definition slightly by using the term “marmalade” to describe our strawberry jam, but our customers don't mind much, once they’ve tasted it. We use pure cane, not beet sugar in our marmalade, and we think you will appreciate the difference. We use standard sugar, as the organic version has a higher molasses and water content, which demonstrably changes the flavor of the marmalade. |
